Classic Sicilian Arancini

Ingredients (for about 8 arancini)

For the rice:

  • 400g risotto rice (Arborio)

  • 1L vegetable or chicken broth

  • 1 small onion, finely chopped

  • 30g butter

  • 50g grated Parmesan

  • Salt, to taste

For the filling:

  • 200g ground beef

  • ½ small onion, chopped

  • 100g tomato sauce

  • A handful of peas (optional)

  • Salt & pepper

  • Small cubes of mozzarella

For coating:

  • Flour

  • 2 eggs, beaten

  • Breadcrumbs

  • Oil for frying


Instructions

Cook the rice: In a pot, sauté the chopped onion in butter. Add the rice, stir, then slowly add hot broth until the rice is fully cooked and slightly sticky. Mix in Parmesan and let it cool completely.

Prepare the filling: Cook the onion and beef together in a pan. Add tomato sauce, peas, salt, and pepper. Simmer for 10 minutes. Let it cool.

Shape the arancini: Take a handful of rice, flatten it in your hand, and place a spoon of filling plus a cube of mozzarella inside. Add more rice on top and shape it into a ball or cone.

Coat: Roll each ball in flour, dip in beaten eggs, then coat with breadcrumbs.

Fry: Heat oil and fry the arancini until golden and crispy on all sides. Drain on paper towels.
