🍆 Sicilian Caponata (Simple Version)

A sweet-and-sour eggplant dish that’s a true Sicilian classic. Great as a side dish, appetizer, or on toasted bread.

Ingredients

  • 1 large eggplant

  • 1 small onion

  • 2 celery stalks

  • 200 g chopped tomatoes (or canned)

  • 2 tbsp green olives (sliced)

  • 1 tbsp capers

  • 2 tbsp olive oil

  • 1 tbsp red wine vinegar

  • 1 tsp sugar

  • Salt & pepper

 

How to Make It

Cut the eggplant into cubes and fry in olive oil until golden. Set aside.

In the same pan, sauté onion and celery until soft.

Add tomatoes, olives, and capers. Cook for 10 minutes.

Stir in vinegar and sugar, then add the eggplant back.

Season with salt and pepper and cook for 5 more minutes.

Let it cool slightly before serving — caponata tastes even better at room temperature.
