🧀 Pasta alla Norma (Easy Sicilian Classic)

One of the most famous dishes from Catania, made with just a few ingredients and big flavor.

Ingredients

  • 400 g pasta (rigatoni or penne work well)

  • 2 medium eggplants

  • 400 g tomato sauce

  • 1 clove garlic

  • Olive oil

  • Salt & pepper

  • Ricotta salata (grated, or Parmesan if unavailable)

  • Fresh basil (optional)

How to Make It

  1. Cut the eggplants into cubes or slices. Fry them in olive oil until golden and soft. Set aside.

  2. In a pan, heat olive oil and gently cook the garlic. Add the tomato sauce, salt, and pepper. Simmer for 10–15 minutes.

  3. Cook the pasta in salted water until al dente.

  4. Mix the pasta with the sauce and add most of the fried eggplant.

  5. Serve topped with the remaining eggplant, grated ricotta salata, and basil.
